In GTA 6, Jason and Lucia's Romance Is Optional and Dates Are Activities
The trailers sell Jason and Lucia as a couple, but GTA 6 lets you decide how close they get. The same Rockstar North preview showed how the relationship works, and it runs through the side activities.

Dates are not scripted missions. You ask the other character along to an activity in the open world, such as a zoo visit, a kayak outing or a walk on the beach. Press preview [1]
Neither of them leaves if the romance cools: they keep working jobs together whatever the relationship state. Press preview [1]
Still unknown: Which activities count as dates, and what a closer relationship unlocks.
